Whenever I order a salad at Chipotle, they always ask about the vinaigrette on the side. What they don’t realize is that it’s actually the biggest reason I keep coming back for salads.

What is in Chipotle Honey Vinaigrette?
Chipotle’s vinaigrette combines red wine vinegar, honey, adobo sauce, spices, and oil. Although they typically use rice bran oil in their recipes, I prefer to swap in olive oil or any other neutral-tasting oil I have available.
Start by blending all the ingredients except the oil. Once they are combined, slowly pour in the oil while the blender is running until the mixture emulsifies. It only takes about a minute from start to finish once you hit the button.

What is a substitute for adobo sauce?
Whisk together:
- 1 tablespoon tomato paste
- 1 tablespoon cider vinegar
- One teaspoon chipotle powder (or 1/2 teaspoon each smoked paprika and cayenne powder)
- 1/2 teaspoon cumin
- Pinch EACH of oregano, garlic powder, and salt

- 1/2 cup red wine vinegar
- 1/3 cup honey
- Salt to taste (I like 1 tablespoon)
- 1 tablespoon water
- 1 tablespoon adobo sauce
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon fresh oregano leaves
- 1 teaspoon fresh ground black pepper
- 1 ½ cups olive oil or rice bran oil (s
- ee notes)
Instructions
- Place the vinegar, honey, salt, water, adobo sauce, cumin, garlic powder, oregano, and pepper into a food processor or blender. Turn it on and blend until the ingredients are well combined.
- While the blender or food processor is running, pour in the oil gradually until the dressing thickens and emulsifies. You can enjoy it right away or keep it covered in the fridge for up to four days.
Notes
- Chipotle typically uses rice bran oil in their recipes, but since olive oil is more common and likely already in your kitchen, it makes a great substitute, particularly if it has a mild, neutral taste.
