What are the Fajita Veggies at Chipotle?

The grilled vegetables at Chipotle feature a mix of bell peppers and onions, flavored with salt and oregano.

Feel free to pick any color of bell peppers—red, orange, yellow, or green—and any variety of onion, whether red, yellow, or white. You can also use fresh or dried oregano, but Chipotle typically uses dried Mexican oregano.

How do you sauté vegetables for fajitas?

Warm up the pan until the oil glistens and starts to smoke slightly. Add the vegetables and spices, then stir them quickly for about 5 to 7 minutes. They should stay crisp-tender and retain their bright, fresh color.

While Chipotle opts for rice bran oil, you can choose olive oil or any other oil you like, and then toss the ingredients with finely chopped oregano, whether fresh or dried.

Chances are, you’re familiar with how to cut bell peppers, but if you’re curious about my method, this is how I do it:

  1. Slice off the top and bottom
  2. Cut the pepper in half
  3. Remove the seeds
  4. Cut it into neat little strips.

2 large green peppers stemmed, cored, and sliced

1 large red onion thinly sliced

1/2 tablespoon finely chopped fresh oregano or 1/2 teaspoon dried

1/2 teaspoon Salt


Instructions

  1. First of all, In a large skillet, heat the oil over medium-high heat until shimmering. Add the peppers, onions, oregano, and salt.
  2. Heat until slightly softened but still tender-crisp, about 7 minutes. Remove from heat and serve.
