Simple, yet anything but ordinary, this Gluten-Free Peanut Butter, Banana & Granola Sandwich will rock your world!
Move over PB&J, there’s a new boss in town.
Peanut Butter, Banana & Granola Sandwiches are the new hottness (with 2 T’s). Yes, so good that I will unabashedly pull out my early 2000s lingo because no other terms can appropriately describe the level that his sandwich is on.
But seriously – loaded with rich, creamy peanut butter, piled high with bananas and a mountain of granola, and then drizzled with honey – once you bite into this your taste buds will sing like they’ve never sung before.
I might never eat anything else for lunch ever again, and you can quote me on that.

Once you take the first bite of your peanut butter, banana & granola sandwich and your life is changed forever, you can thank my oldest brother. While he didn’t come up with this combo, he is the reason it exists, and the reason I am sharing this deliciousness with you.
Here’s the backstory:
After a good 6+ months of some pretty horrible health issues, my oldest brother just found out that gluten is to blame. Not surprising considering the rampant autoimmune disorders in our family/extended family, and of course my diagnosis, but still not fun.
Over the last few months I’ve been trying to help him out as much as I can from afar, sending him helpful hints and tips here and there, and of course bombarding him with recipes and recommendations for gluten-free products. I finally got to see him over the holidays (yay for family time!) and was determined to satisfy all of his cravings, and prove to him that gluten-free can be really darn good and easy when you’re doing it right/using the right products.
When I asked what the hardest adjustment was so I could give him some guidance, he said: having quick lunch options like sandwiches and finding hearty, delicious breakfasts.
Psssh, Bro, I got you covered.

Peanut Butter, Banana & Granola Sandwiches: Your Lunch (and Breakfast) Rescue!
Quick, easy, hearty, and *irresistibly* delicious!… check, check, check.
Of course my #1 adviced to cover both of these bases was Canyon Bakehouse Gluten-Free Bread. It’s really no secret that I absolutely love all of their products, and that I’m extra in love with their Gluten-Free Heritage Style Whole Grain bread ( ← slices of gluten-free bread that are actually a regular size. Finally! Hallelujah!) I got my brother some of the bread to try and it got rave reviews so clearly half of my work was already done before I even really started. (Thanks Canyon Bakehouse!)
Since he’s a very busy dad of three, I concocted this sandwich with his life and kiddos in mind – I stuck to standard ingredients that they usually always have on hand, and tried to create something that the kids would gladly eat too (and they are picky, so this was no small feat) so that he could whip up lunch for all of them all at once. And you know what? His kids even loved the bread. His kids who can eat gluten, and are seriously the pickiest eaters I have ever met. Like, everrrrr. So that’s saying something.

Sure, peanut butter and bananas have been done before and are a tried-and-true favorite of just about everyone, but the addition of granola and honey? NEXT LEVEL STUFF, my friends. The crunch, the richness, the sticky sweet mixed with the savory saltiness of the peanut butter. Mmmm, mmmm, mm.
My brother loved that he can make this in the same amount of time that he throws together a PB&J (which is all he has time for most days) yet it really does taste decadent and sophisticated and “not like kid food,” as he put it.
Bonus points that is makes an AMAZING breakfast as well, when kept open-faced as Peanut Butter Banana & Granola TOAST. Two birds, one stone.
So versatile, this recipe.
Personally, I’m all about the toast angle because (a) any excuse to get this in my mouth earlier in the day and (b) you can never have just one piece of toast so that just means I have to make two pieces and double up on the peanut butter/banana/honey/granola – aw, shucks.

TL;DR rundown: Best sandwich to ever go in my mouth, life/lunch-altering, insanely simple, quick and easy, three thumbs up from a gluten-free newbie, picky kid approved, and doubles as an awesome toast/breakfast option to boot. Sooooo, WHAT ARE YOU WAITING FOR?

Best Ever Peanut Butter, Banana & Granola Sandwich
Ingredients
- 2 slices of Canyon Bakehouse Gluten-Free Heritage Style Whole Grain Bread
- 2 heaping Tablespoons peanut butter*
- ½ of a banana, sliced thinly
- 2 Tablespoons gluten-free granola**
- 1 ½ teaspoons honey
- Lightly toast the bread (in a gluten-free toaster!).
- Spread the peanut butter on one piece of the the bread, and top evenly with banana slices. Sprinkle granola over the banana slices, and then drizzle honey evenly over everything.
- Place the second slice of bread on top, cut into quarters (it’s easier to eat that way!) and enjoy!
* I prefer natural creamy style peanut butter, but any kind will do!
** use your favorite granola or whatever kind you have on hand. I have tons of yummy granola recipes, here!
