There’s this thing about smoothies that make me feel refreshed. When I dive into my post-workout shake or wake up to a fruity-spinach filled smoothie my body feels replenished and ready to dominate.
Maybe its knowing all the good and fresh foods I am restoring myself with, physically and mentally. Or maybe it’s the idea that this smoothie is cleansing away all the frustrations and (ahem, desserts) of the day before.

Regardless, smoothies are a staple in my life. You should consider adding them to yours merely for their simplicity and their refreshing super powers. I swear they make the guilt of that chocolate cake you ate completely disappear. Pretty magical if I do say so myself.
This past week I got the pleasure of recieving the “Eat Right For Your Sight” cookbook for review, all centered around recipes that benefit eye sight. Who knew how delicious a healthy eyesight could be?

Whenever I have time off I always find myself at Barnes and Noble with a mocha latte, gazing through cookbooks for hours. That is my happy place. So many recipe light bulbs go off in those moment and the inspiration is ah-flowing.
What I love most about this particular cookbook is how almost every recipe has a photo. This is crucial for me. People in general tend to eat with their eyes, and when you’re rummaging through a cookbook, the photo entices you like no words could.

Jennifer does a great job of highlighting each recipes unique healthy attribute to eye sight, as well as a nutrition/energy breakdown of each recipe. It’s informative, but simple and not overwhelming.
There are still a ton of recipes I am pumped to try like the spicy udon noodles and salmon with peppered balsamic strawberries. And until then let’s make these smoothies happen.

Banana Blueberry Pomegranate Smoothie
- 1 ripe banana
- 2 kale leaves, stems removed (I subbed spinach)
- 1 cup blueberries
- 2 cups pomegranate juice
- 1 Tbsp freshly squeezed lime juice
- Combine all ingredients in a blender and puree until smooth. This should take about 30-60 seconds. Serve immediately and top with your favorite granola or toppings of choice!
