Crispy Sweet Chili Citrus Glazed Tilapia

Ingredients

  • 4 tilapia filets
  • 3 cloves garlic, minced
  • 1/2 cup orange juice
  • 1 Tbsp sesame oil
  • 1 Tbsp soy sauce
  • 1 tsp honey
  • Squeeze of lemon juice
  • Sea salt + black pepper to taste
  • 1/4 tsp paprika
  • 1 bag Way Better Snacks Sweet Chili Tortilla Chips

Instructions

  1. Place tilapia filets in a large shallow dish. Cut small slits into the filets and stuff with the minced garlic. Whisk together the rest of the ingredients besides the seasonings. Pour the liquid mixture over tilapia then sprinkle over sea salt, black pepper and paprkia.
  2. Place in the fridge and allow to marinate for at least 3 hours or overnight.
  3. Once the filets marinated, set the oven to broil. Blend your tortilla chips in a blender until a crumbly flour forms; should take less than 30 seconds. Make sure you blend enough to make one cup of flour, I used about 3 handful of chips.
  4. Dip each filet into the tortilla chip flour then place on a baking dish. Place in the oven on broil and cook for 15 minutes. Serve immediatley with leftover marinade sauce and sides of choice.

Notes

Serves 4.

Pairs well with fried rice, made into tacos or roasted potatoes!
