- 2 cups rolled oats
- 1/2 cup almond meal
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Sea salt to taste
- 1/2–1 cup sliced almonds
- 1/4 cup melted coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup coconut chips
Instructions
- Preheat oven to 325 degrees farenheit. Combine rolled oats, almond meal, cinnamon, nutemg, sea salt and almonds in a large bowl. Whisk together the melted coconut oil, maple syrup and vanilla extract then gently pour into the oats mixture. Mix together with an icing spatula or wooden spoon until the dry ingredients are fully incorporated with the wet ingredients.
- Spread out onto a parchment lined baking sheet and bake for 40-45 minutes, stirring every 15 minutes. During the last 15 minutes, toss in coconut chips.
- Allow granola to cool for atleast 15-20 minutes before eating or storing in an airtight container at room temperature.
