DIY Christmas Gift: Whole Grain Butterscotch Banana Bread

Ingredients

Scale
  • 2 cups whole wheat pastry flour
  • 1 tsp baking soda
  • Sea salt to taste
  • 1 tsp cinnamon
  • 3 large bananas, overripe and mashed (1 cup)
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup Greek yogurt
  • 1/4 cup coconut oil, melted (or butter)
  • 1 egg
  • 1/2 cup butterscotch chips + extra for drizzling on top.

Optional Butterscotch Glaze

  • 1/4 cup butterscotch chips
  • 1/4 cup cream cheese

Instructions

  1. Preheat oven to 350 degrees Farenheit.
  2. Mix flour, baking soda, sea salt and cinnamon in a bowl. In a separate large bowl whisk maple syrup, brown sugar and coconut oil with a hand blender. Add in mashed banana, greek yogurt and egg. Make sure you mash your bananas before adding them into the wet ingredients. You can do this by using the back of a fork!
  3. Blend the ingredients for 2-4 minutes or until well combined and smooth. then set the hand blender aside. Pour in the whole wheat pastry flour, stirring in with a spoon until just combined. Be careful not to over mix during this step! Fold in the butterscotch chips then place into three mini loaf pans or 1 large, greased 9X11 loaf pan.
  4. Bake for 45-55 minutes or until a toothpick comes out clean. If using the mini loaves, the baking time will take around 45 minutes. If using one large loaf pan, baking time will be around 55 minutes to an hour, depending on your oven.
  5. Allow the bread to cool in pan for 15 minutes before drizzling glaze on top. To prepare glaze, melt butterscotch chips in a microwave safe bowl for 30 seconds then whisk in cream cheese. Drizzle on top and cut bread into slices, or wrap up as a DIY Christmas gift!

Notes

Makes 3 mini loaves or 1 large.

*You can use plain fat free yogurt, 2% or vanilla flavored.
