You guys. I have missed you; missed the blog, missed the recipes, the photoghrpahy and most importantly the food.

So I send my deepest apologies to my fellow readers for leaving you hanging for a week, with no Nutritious Kitchen adventures. It’s bad I know. Sometimes life gets crazy and you need to stop, think and breathe it all in before diving back into normalcy. Needless to say, hi. How are you?! What food has everyone been cooking up this summer?

With finals barely ending and a full time physical therapy aide job taking over, summer bliss has been quite hectic for me. On top of that there’s family occasions, errands, getting ready to move…ahh the chaos of life. It’s a love-hate feeling. Regardless, there is always time to cook. Cooking and baking is what keeps me sane and knowing there are meals to eat during the chaotic week leaves me feeling satisifed and less stressed.

To get into the summer spirit, how about some quick and easy smoothies? I know, so boring. In all honesty this simplicity is just what I needed to calm the storm of my chaos. Plus this isn’t a typical smoothie. Theres balsamic vinegar in it. Boring just got a little more interesting.

You should know, I have this slight obsession with balsamic vinegar. GOOD balsamic vinegar. The stuff at the market is crap. In fact, I can easily tell the difference bettween good quality vinegar and downright horrible vinegar. Wine is another story though. One is red, the other is white. All are capable of filling my glass at 5 p.m.

Vinegar, unlike wine, is where my pickness kicks in to the fullest. Usualy the only kind that is AMAZING is from this store called Olive store. Which is about 2 hours away from me and a total drag to get my hands on. Just recently though Joey’s mom told me about a new balasamic place by our house and I litteraly jumped out of my skin with excitement. The place is called Bluff Clove and there vinegars/olive oils are to-die-for. Vinegar stores to me are like kids to Dinseyland. Magical.

The strawberry balsamic flavor made me swoon. Literally, this stuff is crack and I have no shame in drinking it plain. Bluff Clove has a wide variety of unique and all naturall vinegars from cranberry pear to espresso. Yes, they have espresso vinegar and it is delicious. Think, steak marinated in that stuff…brilliant.

Instead of drinking the balsamic right out of the bottle you should throw it into a healthy fruit smoothie and have your life changed forever. Fruit + blasamic go together SO well it will shock you! And all you need for this recipe is:

Frozen bananas
Strawberries
Balsamic Vinegar (GOOD QUALITY)
Almond Milk

How about that for simplicity? If you really want to enjoy summer bliss try adding in a little vodka to make fun fruity cocktails or even champagne. Such a great complement to your next summer bbq…aka 4th of July! This smoothie is so refreshing and has the perfect amount of sweetness, anyone will enjoy it. The balsamic adds a great complement of flavor making your normal, boring smoothie into something a bit more grown up. And just downirght delicious

Strawberry Balsamic Fruit Smoothies

Ingredients

Scale
  • 2 large bananas, overripe and frozen
  • 3/4 cup strawberries
  • 1/4 cup vanilla almond milk
  • 2 Tbsp Strawberry Balsamic Vinegar*

Instructions

  1. Blend all ingredients in a high powdered blender until smooth. Pour into two glasses and top with extra balsmic and strawberries if desired.
  2. Optional: Add in some vodka or champagne to make it more fun. Great drink to serve at a summer bbq!

Notes

*I bought my strawberry balsamic vinegar from a vinegar store called Bluff Cove. The link to their website is above. Please use a good quality vinegar, it really makes a difference
