Gluten Free Chicken Tenders with Creamy Chipotle Sauce

Ingredients

  • 1 cup Breton Gluten Free Garlic & Herb Crackers (about 20 crackers)
  • 1 Tbsp Old Bay seasoning*
  • 1 tsp sea salt
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 cup plain greek yogurt (I used Chobani)
  • 2 Tbsp dijon mustard
  • 1 Tbsp raw honey
  • 1 lb boneless chicken breast, cut into tenders**

Creamy Chipotle Sauce

  • 1/3 cup greek yogurt
  • 1 Tbsp chipotle sauce from canned adobe chipotle
  • 1 Tbsp ketchup

Instructions

  1. Pre heat oven to 450 degrees Fahrenheit. Pulse crackers in a high powered blender or food processor for a few seconds. Or you can crush them yourself until they make small crumbles.
  2. Place your cracker breadcrumbs in a bowl and set aside.
  3. In a separate bowl combine spices, greek yogurt, dijon and honey. Dip each tender into the yogurt mixture, then roll into the breadcrumb mixture until fully covered. Place onto a parchment lined baking tray and repeat process untill all tenders are used.
  4. Spray each side of the tenders with olive oil spray then place in the oven for 10 minutes. Flip and bake for about 5 minutes, or until the breadcrumbs turn golden brown. Then place your oven to broil for 1-2 minutes for an extra crisp.
  5. Serve immediately with creamy chipotle sauce and some sweet potato fries 🙂

Notes

  1. Old Bay seasoning can be found at your local market. If you can’t find it you can use your favorite spice blend.
  2. **Chicken breast can be cut into 3 inch strips or however size you prefer them. Or you can buy the pre cut breast tenders from Trader Joe’s.
