In honor of Celiac’s Awareness Month the Recipe Redux challenged us to a gluten free recipe featuring Brenton Gluten Free Crackers. Celiac’s disease is more relevant now than it ever has been and the “gluten free” fad has been spreading like peanut butter on toast.
While I do not have celiac’s nor does my digestive system lead me to be gluten free, there are still some bomb.com gluten-free recipes out there that I will gladly partake in.

These chicken tenders are one of them. Thankfully there is an abundant source of gluten free recipes and products out there on the market making it easier for people with Celiac’s to live a delicious lifestyle. If these chicken tenders are on the menu made with these yummy garlic&herb flavored crackers, by all means, bring me the gluten free plate please.
Oh and I can’t tell the difference between a gluten free cupcake or a gluten filled cupcake for the life of me. Seriously, they are just as good and I definitely need to make a recipe for all my GF loves out there. Although I always feel less guilty eating gluten free and end up gorging but you know, compromise.

So these tenders, need to happen before you go buy your gluten free dessert cupcakes. They are SO easy to make, healthy and oh so tasty. You will not need to order those deep fried tenders at Norm’s diner ever again after experiencing the simplicity and flavors of this recipe.
The bread base is just a mix of Brenton Gluten Free flax crackers and garlic&herb crackers. The garlic and herb was my favorite between the two! So tasty, and my mom couldn’t stop eating them plain as I prepared this recipe.

The “batter” for these tenders is simply just greek yogurt + dijon + honey + spices. Greek yogurt on your chicken? Weird right? Wrong. The yogurt mixed with everything else creates this thick, delicious batter, giving your chicken the BEST moisture! Something most chicken breasts lack. This will be the greatest discovery in your chicken-baking life.

Gluten Free Chicken Tenders with Creamy Chipotle Sauce
- Yield: 4–6 servings 1x
Ingredients
- 1 cup Breton Gluten Free Garlic & Herb Crackers (about 20 crackers)
- 1 Tbsp Old Bay seasoning*
- 1 tsp sea salt
- 1 tsp oregano
- 1 tsp garlic powder
- 1/2 cup plain greek yogurt (I used Chobani)
- 2 Tbsp dijon mustard
- 1 Tbsp raw honey
- 1 lb boneless chicken breast, cut into tenders**
Creamy Chipotle Sauce
- 1/3 cup greek yogurt
- 1 Tbsp chipotle sauce from canned adobe chipotle
- 1 Tbsp ketchup
Instructions
- Pre heat oven to 450 degrees Fahrenheit. Pulse crackers in a high powered blender or food processor for a few seconds. Or you can crush them yourself until they make small crumbles.
- Place your cracker breadcrumbs in a bowl and set aside.
- In a separate bowl combine spices, greek yogurt, dijon and honey. Dip each tender into the yogurt mixture, then roll into the breadcrumb mixture until fully covered. Place onto a parchment lined baking tray and repeat process untill all tenders are used.
- Spray each side of the tenders with olive oil spray then place in the oven for 10 minutes. Flip and bake for about 5 minutes, or until the breadcrumbs turn golden brown. Then place your oven to broil for 1-2 minutes for an extra crisp.
- Serve immediately with creamy chipotle sauce and some sweet potato fries 🙂
Notes
- Old Bay seasoning can be found at your local market. If you can’t find it you can use your favorite spice blend.
- **Chicken breast can be cut into 3 inch strips or however size you prefer them. Or you can buy the pre cut breast tenders from Trader Joe’s.
