- 1 cup rolled oats
- 1 cup oat flour
- 1/4 cup cocoa powder
- 1 cup chunky peanut butter
- 1/2 cup honey
- 1/4 cup chocolate chunks
- 1/4 cup peanut butter cups (or more chocolate)
Optional PB Cream
- 2 Tbsp cream cheese, softened
- 3 Tbsp vanilla greek yogurt
- 1 Tbsp peanut butter
Instructions
- Line an 8×8 baking dish with parchment paper and set aside. Combine oats, oat flour and cocoa powder until it’s fully combined and no there are no clumps from the cocoa powder. In a seperate dish whisk together the peanut butter and honey until fully mixed. My peanut butter was a drippy which made it easy to mix. Pour peanut butter mixture into oats then add chocolate chunks and peanut butter chips. Mix with a wooden spoon or frosting spatula until a dough forms.
- Press into your baking dish and allow it to chill in the fridge for atleast 3 hours or overnight before cutting into squares.
- You can top the bars with peanut butter cream if you want by mixing the cream cheese, yogurt and peanut butter then spreading on top.

Makes 12-16 bars.
