No Bake Peanut Butter Cup Brownie Bars

All about the “no-bake” bars lately.

When my oven gets turned on in my teeny tiny kitchen, the entire apartment feels like a heat death trap. That plus the fact that summers in SLO are no joke when it comes to the weather, a hot apartment is not my style.

Luckily I will be moving into the cutest house next week with a spacious kitchen and huge windows that I am sure will bring in the best breeze. Until then, recipes that don’t involve my apartment oven is more my style.

Joey has been staying with me this week and giving how much he loved my last no-bake bar recipe, I knew I had to whip up another one for us to snack on.

These brownie bars are basically a spin off from my cookie dough bars, with more chocolatey flavors and peanut butter cup resemblance. Aka a dreamy dessert in no-bake bar form.

These bars contain oats, oat flour and peanut butter so if you wanted to crumble them into your breakfast yogurt bowl, by all means go for it.

Or if you need a little mid-day pick me up, these bars are your new bff. Or if you’re like me and crave chocolate on a constant basis to the point where it becomes as necessary for daily life as your left arm, then you pretty much NEED to make these.

Next week is going to be a little hectic with moving + summer school + nanny jobs so these bars are for real going to be a life saver.

No Bake Peanut Butter Cup Brownie Bars

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup oat flour
  • 1/4 cup cocoa powder
  • 1 cup chunky peanut butter
  • 1/2 cup honey
  • 1/4 cup chocolate chunks
  • 1/4 cup peanut butter cups (or more chocolate)

Optional PB Cream

  • 2 Tbsp cream cheese, softened
  • 3 Tbsp vanilla greek yogurt
  • 1 Tbsp peanut butter

Instructions

  1. Line an 8×8 baking dish with parchment paper and set aside. Combine oats, oat flour and cocoa powder until it’s fully combined and no there are no clumps from the cocoa powder. In a seperate dish whisk together the peanut butter and honey until fully mixed. My peanut butter was a drippy which made it easy to mix. Pour peanut butter mixture into oats then add chocolate chunks and peanut butter chips. Mix with a wooden spoon or frosting spatula until a dough forms.
  2. Press into your baking dish and allow it to chill in the fridge for atleast 3 hours or overnight before cutting into squares.
  3. You can top the bars with peanut butter cream if you want by mixing the cream cheese, yogurt and peanut butter then spreading on top.

Notes

Makes 12-16 bars.

Keep stored in the refrigerator.
