Peanut Butter Chocolate Chip Cookie Dough Overnight Oats

One of my favorite things to do as a kid was lick the bowl. My mom makes this AMAZING cookie bar recipe called congo squares. They are a mixture of chocolate chip cookies and blondies in one recipe.
Let’s just say the batter is the best thing I’ve ever eaten.
More recently, I’ve been obsessed with all things peanut butter. Wahhhhh. You didn’t know that? 😛 This recipe reminds me of the batter of Peanut Butter Chocolate Chip Cookies (this recipe, but with peanut butter to be exact).
It’s….
- thick
- peanut buttery
- packed with protein (thank you peanut flour!)
- lower in fat (thank you peanut flour, again!)
- HEALTHY
Because there wasn’t enough peanut buttery taste already, I topped mine with some real, all-natural peanut butter that I got from Costco last week. Don’t even let me start with Costco. #truelove
Peanut Butter Chocolate Chip Cookie Dough Overnight Oats
- Place all ingredients (minus the chocolate chips) in a medium size tupperware and mix.
- Then, place into fridge for 2 hours or overnight.
- In the morning, add a few more tablespoons of almond milk (if need be
- Eat with a drizzle of peanut butter on top.
If you did not use sweetened almond milk, feel free to add ½ tablespoon more of sweetener (or more!).

I’m sure I’ve mentioned this before…but I think it’s the most interesting thing about me. It’s actually ALWAYS the one interesting fact I share in groups when we each have to share something interesting about ourselves…
My brother Clay and I have the same birthday…but 4 years apart! On April 17th I will be 25 and he will be 21! I still can’t believe how cray it is. On top of that…we share a birthday with our Great Great Uncle Chester. My sister was born just 2 weeks earlier on March 26th (the year before me), but her due date was actually in April. 3 births on one day would have been too crazy to be true!
