I love ice cream and ice cream loves me. 

Yup that’s my #4 Fact of the series: ice cream is my favorite dessert! 

I guess it’s really not THAT interesting, but it’s definitely true. You can even ask Blake. There are nights when I drag him to DQ or to a froyo place, just so that I can get my fix. Best part is- he usually doesn’t order anything! Eating ice cream alone is worse than going to the movies alone…

How could he, right?

I’m super pumped about this recipe because it’s so flipping gorgeous and is like the best thing I’ve ever eaten. Each section is made with a combination of Greek yogurt, milk, chia seeds, and flavored accordingly. 

  • Vanilla: vanilla extract or vanilla bean
  • Chocolate: cocoa powder
  • Strawberry: purred strawberries

Neapolitan Overnight Oats

Serves: 2 servings

Serving size: ~ 1 cup

  • ⅓ cup rolled oats
  • ½ teaspoon chia seeds
  • 2 tablespoons vanilla Greek yogurt*
  • ⅓ cup + 1-2 tablespoons milk, any kind (depending on how thick you like your oats)
  • ¼ teaspoon vanilla extract
  • ⅓ cup rolled oats
  • ½ teaspoon chia seeds
  • ½ tablespoon cocoa powder
  • ⅓ cup + 1-2 tablespoons of milk, any kind
  • ½ tablespoon maple syrup (or any kid of sweetener)
  • ⅓ cup rolled oats
  • 1.5 tablespoon vanilla greek yogurt*
  • 2 large strawberries
  • ½ teaspoon chia seeds
  • ¼ cup milk (any kind)
  1. For the vanilla and chocolate flavors, mix all ingredients in a small bowl and place in the refrigerator for at least 2 hours or over night.
  2. For the strawberry flavor, place strawberries and milk into a small food processor or magic bullet and puree. Then, mix with the rest of ingredients in a small bowl. Place in refrigerator for at least 2 hours or overnight
  3. In the morning, serve layered like neapolitan ice cream.

if your yogurt was not sweetened, you will need to add about ½ tablespoon of sweetener such as maple syrup or honey to each layer.
*This recipe is meant to turn out thick. Feel free to add a tablespoon or two of milk in the morning to thin things out, depending on how you prefer your oat consistency!

If I had to choose my favorite ice cream flavor I would say…pistachio or coconut (as of right now). I feel like my favorite flavor changes depending on the season, or where I am in the world. Ever since I tried pistachio gelato in Florence, I have been hooked on that flavor ice cream. And coconut, well it just rocks.

As for this recipe…if I had to choose which layer is my fav…I’d say hands down the strawberry layer! The pureed strawberries give this recipe so much amazing flavor and color. Don’t skimp on this layer, people!
