Double the cookies double the fun. Monday’s got nothin on me.

It will come as no surprise that I don’t eat to live. I live to eat. Food is what drives my imagination. Baking is forever embedded within my soul. Spices, herbs, hearty breads and creamy cheeses allow me to function. Catching up with friends over brunch, tapas, wine and everything in between is what keeps my life balanced. And let’s not forget dessert. Rich flavors of dark chocolate, heavy buttercream frosting and the scent of freshly baked cookies keep my heart pumping.
Food is my life. All foods of different sorts. Yes I am a nutrition major with plans of becoming a registered dietician. Yes, the basis of my blog and my career are centered around healthy recipes. BUT I never discriminate with my food or bottle up those lovely cravings.


Somewhere through my adulthood journey I came to this sense that being nice to my body, my health and my passion for food is key to maintaining happy energy. There are some days where 3 p.m. strikes and I want a latte with a cookie to dunk it in. Then there are days when I want a plate full of hummus and fresh veggies. Either way, I am nice to my body. I nourish and feed it with good quality, delicious foods. So when the cookie craving strikes, I try to satisfy that craving with honestly delicious cookies.
No weird stuff either. This girl is all about the homemade, chemical free, good old-fashioned desserts.

So these cookie dough parfaits are made super-duper easy with crumbles of ginnybakes chocolate chunk cookies layered in-between healthy peanut butter cookie dough you can prepare in minutes + some creamy greek yogurt.

Cookie Dough Cookie Crumble Breakfast Parfait
- Yield: 1 servings 1x
Description
Double the cookies double the fun. Monday’s got nothin on me.
Ingredients
Cookie Dough
- 4 Tbsp oat flour
- Sea salt + cinnamon to taste
- 1/2 banana, mashed
- 1 Tbsp peanut butter
- 1 tsp maple syrup
Parfait
- 1/2–1 cup plain or vanilla Greek yogurt
- Ginnybakes double chocolate cookie, crumbled
- Banana slices (optional)
- Melty peanut butter (optional)
Instructions
For the cookie dough
- Combine all ingredients with a fork, mixing and mashing until a dough has formed. Cover and place in the refrigerator overnight. You could also use the dough right away for the parfait if you don’t want to make it overnight, but I preferred the texture after it was refrigerated. Either way it works!
For the parfait
- Layer half your yogurt into the bottom of a jar or bowl. Top the yogurt with cookie dough rolled into balls or on its own. Top the cookie dough with some crumbled cookies. Then layer the rest of your yogurt over that and top with the rest of cookie crumbles. You can also add sliced bananas to the layers and top it all off with melty peanut butter if you want.
Notes
- Makes 1 serving. Can be made ahead of time and stored in the fridge for a few days as well.
