Whew what a title. I just spent a solid 15 minutes contemplating how to title these beautiful lemony squares.

There’s lemon olive oil involved. Lots of almonds (almond flour + honey roasted almonds), lots of oats (oat flour + rolled oats) and they are cut into little squares. Hence my title of choice.
Moving on…usually my snack cravings don’t involve lemony type things. They are almost always along the lines of chocolate, peanut butter, maple granola type things. Something had me yearning for a little change though.


I am also yearning for a change in the haircut department. As of late, I have been contemplating the whole Zoey Deschanel look. LOVE her bangs and wavy hair. Not sure if I can pull off that look though…thoughts?
Besides my boring hair dilemma, some exciting stuff has been happening this summer. For starters I moved into a big new house with some great girls. I finally feel like I can breathe. And have a huge kitchen to play in…bliss.

There is also my East Coast trip coming up at the end of September for Blog Brulee in Vermont AND visiting my cousin/best friend/sister in NYC. Finally fulfilling my lifelong goal of traveling to New York. Someone pinch me before I wake up from this dream.
Which brings me to segment three of my summer full of exciting news. I recently got a part-time job (as if I needed another thing on my plate lawls) at a specialty olive oil store downtown called We Olive.
I know…between school, blogging, interning as a nutrition educator and finding time to live my life…adding olive oil associate to the list sounds a bit ambitious.

Being busy can be tough sometimes but when my schedule is jam-packed with all the things I am passionate about…it’s hard to complain.
SO, these bars. Meyer Lemon Olive Oil from We Olive inspired my current cravings for all things lemon.
I am the farthest thing from materialistic but when it comes to spending money, good quality olive oil + balsamic is SO worth it. Please, do me a favor and treat yourself to meyer lemon extra virgin olive oil. Then make these No-Bake Lemon Olive Oil Almond Oat Squares.

{No-Bake} Lemon Olive Oil Almond Oat Squares
Ingredients
- 1 cup oat flour
- 1/2 cup almond flour
- 1/2 cup rolled oats
- 2 tbsp chia seeds
- Sea salt to taste
- 1/2 cup almond butter
- 1/4 cup extra virgin lemon olive oil*
- Juice from 1 large lemon
- 1/4 cup maple syrup
- 1/2 cup sliced almonds**
Optional toppings
- Extra sliced almonds
- Coconut chips
- Lemon zest
Instructions
- Line a parchment lined 8×8 baking dish and set aside.
- Combine oat flour, almond flour, rolled oats, chia seeds and sea salt in a large bowl. Whisk together almond butter, lemon olive oil, lemon juice and maple syrup in a seperate bowl. Pour into oat mixture and mix until dry ingredients are fully absorbed with wet. Fold in the sliced almonds. The dough will be thick!
- Spread mixture onto parchemnt lined baking dish with a icing spatula until it is fully in dish and evenly spread out. Press down hard with the back of spatula, then press in optional toppings.
- Place in the fridge for atleast 3 hours or overnight. Once chilled cut into 12 squares.

- I used honey roasted sliced almonds from Trader Joes
