Maple Sesame Banana Pecan Granola

Aka chunks of sesame maple love.

How interesting is this flavor profile though? Maple syrup + sesame oil + bananas + pecans. Does this go under the strange but good category?

This was my first time using sesame oil in a granola recipe which is probably why my mind is ALL thrown off thinking this is some outlandishly unique recipe. [Side note: is outlandishly a word? My proofread didn’t pick up on it but I have a feeling my dad will be messaging me sometime today to correct me]

My summer biology class just started (le sigh) so my heart is naturally aching for a carby maple granola recipe to lick my wounds.

The other day I was explaining to my co-worker at We Olive that granola is my thing. It soothes my soul and the scent that takes over the kitchen makes me melt.

Whenever I have a hectic day, emotional day or bad day in general…late night granola baking is happening. And it puts my mind at rest every single time. Not to mention the taste buds are happy.

Before going into how delectable these flavors are together, I haven’t actually tasted the final product. The granola is currently baking in the oven and the smell alone is providing me with the motivation to write this post.

By the end of all this I will have my final verdict with you. Let’s hope round 1 of recipe testing went well and I don’t have to make 3 batches until it’s perfected. Ugh, ignore the phrase “perfected”.

I really should backspace that and change the wording but instead we’ll carry on with how I don’t agree with perfection. It’s all the little imperfections that make something beautiful and unique, correct? insert—> #corny but true.

But on a real note maybe batch numero uno of all my recipes don’t come out as expected but that’s what makes it fun and challenging. All that hard work is extra rewarding at the end. That’s me being philosophical in a straight-to-the-point sort of way.

SO finally. The verdict. The moment we’ve been waiting for during my long granola-imperfection rant…

This Maple Sesame Banana Pecan Granola is on point. Yup, no lies. Currently melting. Swooning. Smiling. And all the other things that put one at ease. Make this and I promise you batch #1 will turn out so imperfectly perfect.

Maple Sesame Banana Pecan Granola

Ingredients

Scale
  • 2 cups rolled oats
  • 1/4 cup flaxseed meal
  • 1/4 cup oat flour
  • Sea salt to taste
  • 1/2 tsp cinnamon
  • 1/4 cup sesame oil
  • 1/2 cup maple syrup
  • 1/2–1 cup candied pecans, chopped (or regular)
  • Handful of banana chips*

Instructions

  1. Preheat oven to 300 degrees farenheit. Line a large baking sheet with parchment paper or baking sheet.
  2. Combine oats, flaxseed meal, oat flour, sea salt and cinnamon in a large mixing bowl. Whisk sesame oil and maple syrup together then pour into dry ingredients. Mix in chopped pecans and stir together until oats are completely coated in wet ingredients.
  3. Spread mixture onto lined baking sheet, with granola spread out evenly. Bake in the oven for 35-40 minutes, stirring granola every 10 minutes.
  4. Allow granola to cool completely for atleast 15 minutes. Mix in banana chips and serve!

Notes

*I used Trader Joes banana chips, highly reccommend!

Store granola at room temperature in an airtight container or glass jar. Maks about 4 cups.
