They call me the granola monster.

For reals, my granola addiction is pretty legit. And I find this to be the most amazing addiction possible.
I think my friends and family would agree since they get experience my granola love almost anytime they see me. In all honesty I am not a huge coconut person. Don’t get me wrong though, I am all about the pina coladas and coconut cream filled things. But straight up coconut flakes or coconut flour is not my forte.


So now you are wondering why in the world is this non-coconutty person posting delicious almond coconut granola. Even though most of my recipes are inspired by my hunger and cravings, this specific recipe was inspired by my family.
Since I visited home this past weekend I knew I had to bring a bag full of goodies because that is just standard for me at this point. Plus I don’t get to see my hometown peeps all the time so bringing them homemade gifts makes me all warm inside.


Joey’s mom adores all things coconut. I had coconut oil in the pantry, roasted almonds and decided to splurge on coconut chips at TJ’s and here we are. I knew my parents would love this flavor combo too since any granola is their kind of granola.
The verdict? “Best granola you have ever made” via my mom. May or may not be biased but I will take it! And to be real, I fell in love with this stiff. The coconut flavor isn’t too strong and the crunchy coconut chips are to-die-for. The ingredients are easy-peasy and full of good for you flavors. Whether you make this for yourself or feel like making someone else happy, this granola is just plain bonkers awesome. Cheers to coconuts 

Crunchy Almond Coconut Granola
Ingredients
- 2 cups rolled oats
- 1/2 cup almond meal
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Sea salt to taste
- 1/2–1 cup sliced almonds
- 1/4 cup melted coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup coconut chips
Instructions
- Preheat oven to 325 degrees farenheit. Combine rolled oats, almond meal, cinnamon, nutemg, sea salt and almonds in a large bowl. Whisk together the melted coconut oil, maple syrup and vanilla extract then gently pour into the oats mixture. Mix together with an icing spatula or wooden spoon until the dry ingredients are fully incorporated with the wet ingredients.
- Spread out onto a parchment lined baking sheet and bake for 40-45 minutes, stirring every 15 minutes. During the last 15 minutes, toss in coconut chips.
- Allow granola to cool for atleast 15-20 minutes before eating or storing in an airtight container at room temperature.
