Confession #1: I don’t like donuts. I mean I sort of, kind of, almost do.
Confession #2: I don’t like Taylor Swift. Well, I sort of, kind of, almost do.

The other day I was sitting in traffic, which I am doing about 80% of the time due to the commute I have to and from various schools. And I was singing along to a song on the radio. Without even realizing I knew every single word to the song and it was just belting out of me unconsciously. I really had no control over it because it didn’t hit me till the end what was going on…
I was singing along to a Taylor Swift song. I knew every single line, rhythm and emotion of a Taylor Swift song…?! That was a question and a statement. You know that one “been here all along…so why can’t you seee-ee, you belong with mee-eee”. Yes, check it out here.


I have never been the cutesy Taylor Swift kinda girl. I went through this phase my senior year of high school that was a little dark. I wore a lot of black and constantly had my ear phones blasting Nirvana, Led Zeppelin and Pink Floyd. I had this tiny angst of teenage rebellion in me and the idea of anything that entailed the “popular” kids or the “in” things made me smirk. It took awhile for me to get over myself.
I think every teenager sort of goes through a phase like that. Bratty, rebellious, lost…When you don’t 100% fit in you begin to rebel and scoff at the idea of anything that regards “fitting” in. Hence my black wearing, Nirvana listening, ignoring all school functions my senior year, attitude.

Anyways that was way back in the day. I think I finally found myself somewhere along the lines in college. Well, we’ll see what changes in a few years. Regardless, I am a lot happier, and less judgmental. But because of my rebellion side, the idea of suddenly being a Taylor Swift groupie made me second guess life for a second.
Then I realized…what’s wrong with Taylor Swift? So what if she’s pop music, main stream, cutesy, girly, everything i’m not?! I like her songs. I can admit it. I’m not all dark, mysterious and one sided anymore. Her songs are catchy and sometimes weirdly relatable. I’m digging it.
I’m also digging donuts. I grew up hating them. Again, one sided. They just tasted weird to me. Like bread that wasn’t quite sweet enough with an odd glaze icing on top that always gave me a headache. But I recently bought a donut pan because of the endless recipes I kept seeing and kept being tempted with. I figured it’d be totally acceptable to create a donut I actually like. At least I could attempt…So I made these. They’re very apple cider-y fall weather kind of donuts. That you serve with a hot cup of coffee.


The idea of it sounds too typical and perfect for the Holidays. I love giving in to the Holidayness. I have to drink out of a christmas mug and I have to constantly be snuggled by the fireplace. And all recipes concocted must somehow be parallel to Fall/Winter. Apple Cider Donuts + Coffee = holiday happy.
Confession #1 revised: I like donuts. They’re growing on me.

Apple Cider Donuts
- Yield: 6 Donuts 1x
Ingredients
- 1/2 cup whole wheat pastry flour
- 1/2 cup sweet sorghum flour
- 3 Tbsp coconut flour
- 1 tsp baking powder
- 1/4 cup pumpkin puree
- 1/4 cup coconut sugar or brown sugar
- 1 egg + 2 egg whites
- 1/2 cup spiced apple cider
- 1/4 cup apple sauce, unsweetened
- 1/2 tsp cinnamon + nutmeg
- 1 tsp vanilla extract
- Dash of sea salt
Cinnamon Sugar Coating
- 1/3 cup coconut sugar or brown sugar
- 1 Tbsp cinnamon
- 1/2 cup spiced apple juice
Instructions
- Pre heat oven to 350 degrees Fahrenheit. Mix together dry ingredients. In a separate bowl whisk together wet ingredients. Pour wet into dry and mix until well combined.
- Transfer dough to greased doughnut pan. Bake in the oven for 15 to 20 minutes. Let donuts cool for 5 minutes before transferring to a cooling rack.
- While donuts are cooling prepare your cinnamon sugar topping. Combine cinnamon and coconut sugar in a dipping bowl. In a separate bowl have your spiced apple juice. Dip one donut into juice then into cinnamon sugar until well coated.
- Transfer to the cooling rack and repeat with the rest of your donuts. Enjoy!
Notes
These donuts MUST be eaten while warm. They taste best that way preferably with a cup of coffee or crumbled over gelato ice cream. They can easily be reheated in the microwave or oven.
