Whole Wheat Gingerbread Waffles with Cookie Butter Glaze

Such a cliche but it’s so true. All you pessimists turn away. Because this blog is about to get in the Christmas spirit and be decked out with holiday-ness. As you can see by these photos I’ve already broken out the snowflake napkin decorations.

Every year I even buy a new Christmas mug. It’s a great tradition. The best part is I usually find them at Big Lots. Talk about deals man. The one I got this year is by far my favorite and only cost me a measly $2.00. It has a santa hat on it and a note on the back that says: “May your days always be Merry”.

How flippin adorbs is that?! I never say things like “adorbs” so you know I’m overly excited about this. Then for the rest of the month that mug becomes my mug. As in my morning coffee mug. Aka my lifeline. It accompanies my in my morning ritual of relaxation. Delicious breakfast + warm coffee + blankies + Fox 11 News. How I like to start most of my days. The calm before the storm I guess.

So yesterday morning these waffles were apart of my ritual. The fireplace was even on. The weather was a little gloomy and these consisted of gingerbread + cookie butter. AKA my ideal morning. It officially feels like the holidays. I had to give you a Christmas-y waffle recipe and I figured gingerbread fit the criteria perfectly. Anything dessert like pretty much sums up holiday treats though. Just add Christmas sprinkles or decorations to accompany it and you got a classic Holiday dish.

An egg nog flavored waffle might’ve worked too. But I’m not sure how I would’ve pulled that off or how they would’ve turned out. Probably delish. Trader Joe’s has an egg nog ice cream out this year. I mean seriously? Why you gotta play me like that Trader Joe’s?! I know for a fact that stuff is going to be rich, creamy deliciousness. And possibly turn me into a diabetic.

On another note I am going crazy figuring out holiday treats to give away as gifts this year. I love doing that stuff. This year I want to keep it basic and simple though. I always do a classic granola, because everyone loves granola right? And that’s pretty hard to mess up. Obviously I need to get crackin on the cookies. I was also thinking egg nog biscotti…thoughts? Will most likely make a delish cupcake tray for Christmas eve as well.

Ahh but until then, these waffles. Made with whole wheat pastry flour, molasses and Chobani vanilla Greek yogurt. And other non specific ingredients but those three are the tickets to success with this recipe. And that cookie butter glaze though. Once again, another Trader Joe’s obsession I have. Cookie Butter. It’s sinfully deliciousness. They really needa put that on the front of the jar.

Top these with chocolate chips and a little yogurt and that’ll be a Happy December to ya.

Whole Wheat Gingerbread Waffles with Cookie Butter Glaze

Ingredients

Scale
  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1/2 tsp each: cinnamon, nutmeg
  • 1 tsp ginger powder (or 1 Tbsp candied ginger)
  • 1/2 cup vanilla greek yogurt
  • 1/4–1/3 cup vanilla almond milk, unsweetened
  • 1 Tbsp molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp extra sweetener of choice (optional, can use stevia drops, maple syrup, brown sugar, etc)

Cookie Butter Glaze

  • 2–3 Tbsp cookie butter, melted
  • 2–3 Tbsp almond milk
  • 1 Tbsp greek yogurt

Toppings

  • Chocolate chips
  • Greek Yogurt
  • Graham cracker crumbs

Instructions

  1. Combine dry waffle ingredients. In a separate bowl whisk together wet ingredients. Pour wet into dry and mix until well combined. Dispense batter into waffle maker according to its directions. Mine takes about a 1/4 cup of batter for each ring.
  2. While waffles are cooking, prepare cookie butter glaze. Melt cookie butter for a few seconds in the microwave. Then mix in greek yogurt. Add in almond milk, 1 Tbsp at a time. You don’t want it to be runny, but not too thick either. It should have the consistency of a glaze.
  3. Once waffles are ready, layer with desired toppings (highly recommend chocolate chips and greek yogurt) and pour cookie butter glaze over. Enjoy!
