Granola is my thing. Anyone who knows me well, knows there is always granola in my house. Always. It’s become a golden rule.

It is very surprising it took me this long to post my peanut butter granola recipe. This is the original granola recipe that has become a staple in my house for the last few years. Once in awhile I play round with different flavors or techniques, but this peanut butter crunch is my go-to.
It requires minimal effort and minimal ingredients. There is no refined sugar involved or oil/butter. Raw honey is used to add sweetness and all the healthy fats come from natural peanut butter and peanuts.

All the healthy benefits make this granola 100% acceptable to eat throughout the day as a snack or made into a meal. It has whole grains, fiber, healthy fats, minimal sugar and a crunchy peanut butter flavor. Plus the peanut butter adds in a little protein which is always a good thing.
To make it a little more indulgent try mixing in some chocolate chips after it’s done cooling. Do I see a peanut butter cup granola recipe in the near future? Possibly…

This is my favorite granola recipe and has become a family favorite as well. My special granola jar is always full of this due to its simplicity, healthy ingredients and FLAVOR. That’s what really matters right?
The peanut butter is not too overwhelming so even if you’re not a peanut butter obsessor (yes these anti-peanut butter people exist, my dad for example) you will still enjoy this. The peanut butter helps bind the oats and leave them with a crunchy effect after cooking.
.Once you make homemade granola you will never go back to store bought again. The cooking method is extremely easy and the satisfaction of eating something without weird additives is SO worth it. For this recipe all you need to do is heat some peanut butter, maple syrup and vanilla almond milk in a skillet to create a thick peanut butter syrup to bind your oats. Add in your peanuts and raisins of choice then simply bake for roughly 20-25 minutes.

You can make a big batch of this on a Sunday or Monday in order to have a go-to snack on hand throughout the busy week. Or make it into a yummy breakfast by topping it onto vanilla greek yogurt with maple syrup, almond butter and banana slices! This granola has also been known to calm my midnight snack attack cravings. So it’s safe to say it works for every occasion! You can even wrap a bow around a jar and gift it to someone you L-O-V-E. The options are endless

Peanut Butter Crunch Granola
Ingredients
- 2 cups rolled oats
- 1 tsp cinnamon
- 1/2 cup peanut butter (all natural)
- 1/4 cup maple syrup*
- 2 Tbsp almond milk
- 1/3 cup chopped peanuts
- 1/3 cup golden raisins
- Sea salt to taste
Instructions
- Preheat oven to 350 degrees Fahrenheit. In a large bowl combine raw oats, cinnamon, peanuts and golden raisins.
- In a skillet over medium heat combine peanut butter, maple syrup and almond milk. Continually stir until mixture is melted and has come together. It should create a thick syrup texture.
- Pour mixture into dry oats and stir with a wooden spoon until well combined.
- Place granola mixture onto a parchment lined baking sheet and evenly spread out. Try not to leave the granola in big chunks, unevenly spread out. It is important to lay out the oats without crumpling together to ensure a good crunch.
- Sprinkle sea salt over oats and place in the oven for 10 minutes. Flip oats and cook another 10 minutes. Cook for 10-15 more minutes, stirring every 5 minutes until oats are golden brown. It is important to check and stir the oats through cooking time to ensure even cooking and avoid burning.
- Once granola has reached a golden brown color and is done, allow to cool for atleast 15 minutes. (This is the hardest part!) It is vital the granola is allowed time to cool that way the clusters can harden and create a yummy crunch!
- Store in a jar or glass container at room temperature. Serving size varies, this amount typically lasts a week in my house between two people! Enjoy 🙂
- Also feel free to stir in chocolate chips once granola is done cooling for a sweet treat!
Notes
I have used a mixture of brown rice syrup and maple syrup (2 Tbsp each) and have really liked that version. I have also done a mix of maple syrup and honey, which also produced great results. Simply maple syrup is delicious too, the recipe is very versatile!
