Deep Dish Oatmeal Breakfast Cookie

What is it about deep dish things that make life more delicious?

Whenever the words “deep dish” are read it’s like my mind automatically equates that to “holy crap gotta have it, love it and demolish it cuz it’s gonna be a deep lovin explosion in my mouth”. Yes those words exactly, I do not lie when it comes to food enthusiasm.

This cookie is just something dreams are made of. Literally. Just the thought of this breakfast keeps me up at night due to the excitement of deep dish cookies that are awaiting me for the morning.

This meal basically sums up my love have for oats + cookies + chocolate + peanut butter…in deep dish form. It’s hard to even qualify this as a breakfast because it resembles a warm, melty and comforting chocolate chip cookie you eat late at night with milk. It has a decadent appeal to it that requires simple, healthy ingredients. How can the cookie dreams are made of possibly be filled with nutritious foods and qualify as breakfast?! Magic. Or just some peanut butter and chocolate I guess…

Don’t let the “healthy” ingredients scare you either. This doesn’t taste bland or have a harsh texture. It resembles a cookie dough-y middle with a slight outer crisp edge. Again, the cookie dreams are made of.

You can even cook it longer to achieve a more crispier taste, or have it a little under cooked for a warm dough feel. Whatever your cookie preference is, it will work! And it tastes the best right out of the oven, but I have even tried it cold after being stored in the fridge and it was still delish. Like an overnight deep dish oat cookie. Is that a thing yet?

To make this easy-peasy recipe you need a bowl, minimal ingredients, a spoon and toppings of choice. Preferably vanilla greek yogurt or if you’re feeling dangerous, ice cream.

The base of this recipe is oats (automatically healthy + fiber packed), peanut butter (gotta get that protein), apple sauce (fruits!), and dark chocolate (because chocolate soothes the soul).

So here I present to you the Deep Dish Oatmeal Cookie aka the cookie you will eat for breakfast everyday and for dessert. Aka the dessert you can have in the morning without the guilt. Aka the best way to start your day and feel the cookie love take over.

Deep Dish Oatmeal Breakfast Cookie

Ingredients

Scale
  • 1/2 cup raw oats
  • 2 Tbsp oat flour
  • 1/2 tsp baking powder
  • 2 Tbsp peanut butter
  • 6 Tbsp apple sauce (unsweetened)
  • 1Tbsp brown rice syrup (or honey/maple syrup)
  • 1 tsp vanilla extract
  • Sea salt
  • Chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. In one bowl combine oats, flour and baking powder. In a separate bowl mix together peanut butter, apple sauce, syrup and vanilla extract. Once well combined, pour into dry ingredients and mix well. Stir in some chocolate chips and evenly distribute into two greased ramekins.
  2. Sprinkle with sprinkle and extra chocolate. Bake in the oven from 12-15 minutes. For a crispier cookie, cook the full 15 minutes and maybe longer if need be. It all depends on your cookie preference!
  3. Serve immediately with vanilla greek yogurt and toppings of choice 🙂

Notes

The ramekin size can vary anywhere from a 4 inch round or square ramekin to a 6 inch. As long as it is oven safe it will work.

These can also be made the day/night before then place in the fridge covered until read to eat. You can enjoy these cold or re heat in the oven on broil for a few minutes. The deep dish cookie tasted great cold or warm, but I preferred it warm, right out of the oven!
