Being a food blogger doesn’t mean I eat fancy foods on a daily basis. Pach Pie Chia Pudding does not happen for breakfast everyday. And my dinner menu doesn’t always consist of creamy Cabernet veggie lasagna.

Having easy-peasy basic recipes is almost as vital as the other “fancy” stuff. Sometimes life gets in the way and getting creative in the kitchen can’t happen 100% of the time.
Actually okay, in hindsight recipe development is always on the brain in my world, but that’s just how my mind works.

When the foodie in me needs a break, its basic recipes like this chicken that come in handy. As Davida put it in her post the other day, “less is more”. I could not agree more with this girl because that theme can relate to so many things.
Life doesn’t have to be complicated. Especially cooking and eating good quality meals.
This chicken recipe has roughly 5 ingredients, and is the most versatile dish you will have the pleasure of eating. I have made this for Joey twice and seriously seeing others get happy over food makes my world go round. We love this chicken.

You can prep this chicken at the beginning on a Sunday and dress it up differently throughout the week. Toss it with marinara and mozzarella for chicken parmesan, throw it into a refreshing Greek salad, top it with bruschetta and have with zucchini noodles or simple have it how it is with some roasted potatoes (favorite side dish eva!).
On the reals and in the words of The Healthy Maven, less is more. This recipe is simplicity at its finest and too perfect for me after a week of packing, painting and moving. (p.s. all settled into the new house, just got some decorating to do!! HAPPY HAPPY)

Simple Lemon Garlic Broiled Chicken
- Yield: 4–6 servings 1x
Ingredients
- 1 lb chicken breast tenders
- 4 cloves of garlic, chopped
- 1/4 cup olive oil
- Juice from two small lemons
- 1/4 tsp sea salt + pepper
- 1/2 tsp seasoning of choice (TJ’s all purpose, onion powder, garlic powder, paprkia, oregano bbq, etc)
Instructions
- Place chicken breast tenders in a large baking dish. Cut slits in the chicken and stuff with minced garlic. Pour over lemon juice and olive oil, then season with sea salt, pepper and seasoning of choice. I really like to use Trader Joes all purpose or 21 seasoning salute. A blend of onion powder, garlic powder, paprkia and oregano work nicely too, the recipe is very versatile!
- Allow the chicken to marinate for atleast 30 minutes. Set oven to broil and bake for 25 minutes.
- Let the chicken rest for 5 minutes before eating.
