Helloooo my lovely’s.

It has been awhile. A week too long from sharing my cooking adventures, exploring food styling techniques and getting excited over recipe concoctions. Before we get into the crispy fish logistics of this post, how are you? What recipes have you been making? Any exciting summer plans, goals or relaxation planned?
Finals week + working + trying to keep up with everything in between has got be flustered like woah right now. Luckily after Friday my inner zen will be back in full force and my heart will be back in the kitchen.

On a serious level I miss baking. Like every single night this week my mind has been pondering the idea of whipping up cookies, using the last of my peanut butter jar to make granola or maybe some chocolate chip banana bread. Are the bananas ripe..please tell me they’re ripe? Those have been my thoughts. Along with ditching the cruelty of biochemistry that has consumed me, aged me and even brought me to tears (kidding…kinda) and making nutella donuts.
This girl has been deprived of selflessly baking/cooking just for the pure joy of it and that is no buens. When I turn in my biochem final Friday (my last chemistry final ever, yay!) you can only imagine the amount of emotions that will get poured into recipe development.


My heart and soul belong to food. It’s apart of me. It’s what I do. So without further ado I am making up for my absence with this easy-peasy tilapia recipe.
Tilapia can get a bad rap for being…boring. Well, hello and welcome to my life where any food labeled “boring” means bring on the challenge yo.

Here are some tips for making an off-the-chain delicious tilapia that will put your expensive halibut to shame.
#1: MARINADE. You gotta marinate the heck outta this thing. Lucky for you the marinade in this recipe is super easy, healthy and booming with citrus pizaaz (think fresh orange juice, sesame and garlic lovin)
#2: CRISP. Enter–> Way Better Snacks. Their Sweet Chili Chips get blended into a crumbly crumb mixture that will get coated over the fish for a crunchy bite of heaven. (will I ever NOT be over dramatic about food?) Out of all the chip flavors I tried from Way Better Snacks, this Sweet Chili was by far my favorite.
Plus they used fun sprouted ingredients like chia seeds, quinoa, flax and sprouted brocoli seeds. Yup. All in a chip form. Brilliance.

Crispy Sweet Chili Citrus Glazed Tilapia
- Yield: Serves 4
Ingredients
- 4 tilapia filets
- 3 cloves garlic, minced
- 1/2 cup orange juice
- 1 Tbsp sesame oil
- 1 Tbsp soy sauce
- 1 tsp honey
- Squeeze of lemon juice
- Sea salt + black pepper to taste
- 1/4 tsp paprika
- 1 bag Way Better Snacks Sweet Chili Tortilla Chips
Instructions
- Place tilapia filets in a large shallow dish. Cut small slits into the filets and stuff with the minced garlic. Whisk together the rest of the ingredients besides the seasonings. Pour the liquid mixture over tilapia then sprinkle over sea salt, black pepper and paprkia.
- Place in the fridge and allow to marinate for at least 3 hours or overnight.
- Once the filets marinated, set the oven to broil. Blend your tortilla chips in a blender until a crumbly flour forms; should take less than 30 seconds. Make sure you blend enough to make one cup of flour, I used about 3 handful of chips.
- Dip each filet into the tortilla chip flour then place on a baking dish. Place in the oven on broil and cook for 15 minutes. Serve immediatley with leftover marinade sauce and sides of choice.

Pairs well with fried rice, made into tacos or roasted potatoes!
