Creamy Marinara Garlic & Herb Chicken with Aged Cheddar Orzo Pasta

It was through this recipe something amazing was discovered.

Mascarpone cheese and marinara sauce were meant to be together. The greatest gift I could ever give you is this valid piece of information.

Oh and this brilliant combination + aged cheddar = mind blown. The other day at Trader Joe’s I decided to switch gears from my usual mozzarella cheese and opted for some sharp aged cheddar. After feasting on Cabot cheese last month, my taste buds have been aching for the stuff. So many great decisions were made into this one recipe, it makes me so excited to share it with y’all.

Besides all these creamy-cheesy components there is also something extra special about this recipe.

Simply Organic reached out to me a few weeks ago inviting me to try one of their new products. They have really pushed their creativity boundaries with these Steam Gourmet Parchment and Seasoning Kits. Before receiving the product I wasn’t really sure what to expect or how complicated it was going to be. Fear not, this stuff was a complete life saver. Especially since Joey was in town for the weekend and I had NO CLUE what to make.

The Steam Gourmet method is pretty simple. They have a variety of different flavors to choose from like Cajun, Paprika, Garlic & Herb…Each box comes with two steam packets plus a seasoning kit. All you have to do is season your chicken or meat of choice then place it into the steam packet and bake.

It’s SO CONVENIENT! The parchment steam packet is scented with the flavor and the seasonings really spruce up your meat making for a super tender + tasty chicken.

In this case, I stuffed the chicken breasts with aged cheddar, dredged them in the mascarpone marinara sauce then sprinkled them with the garlic & herb seasoning. Usually when I bake chicken, it’s a toss-up of whether or not it’s going to come out dry. My biggest pet peeve on the planet.

The combination of the sauce, cheese and steam packet made this chicken SO amazingly tender. Trust me when I say, they are not paying me to say this. I truly did enjoy this product and this meal made Joey a happy camper. It’s always a confidence boost when your meat-loving boyfriend goes wild for your homemade dinner.

Creamy Marinara Garlic & Herb Chicken with Aged Cheddar Orzo Pasta

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1 cup mascarpone cheese
  • 1/2 cup aged cheddar + extra for sprinkling on top
  • 1 Steam Gourmet Garlic & Herb seasoning & parchment packet
  • 2 cups cooked orzo pasta

Instructions

  1. Preheat oven to 400 degrees farenheit.
  2. Place mascarpone cheese in a microwave safe bowl and melt for about 30 seconds until softened. Mix with marinara sauce of your choice with a fork until fully combined.
  3. Place about 1/2 cup of the sauce on a plate and set aside.
  4. Slice halfway through your chicken making a crease big enough to stuff in cheese. Stuff in as much of your aged cheddar as you can then seal closed.
  5. Dredge each side of the chicken breast into the 1/2 cup of sauce and evenly season with garlic & herb seasoning. Place the chicken breasts into your parchment steam packet, fold and seal shut.
  6. Bake chicken in the oven for 35 minutes. Once done baking, allow to rest for 5 minutes. Mix the rest of your sauce, aged cheddar and orzo pasta together then serve with the chicken. Enjoy!

Makes 2-4 servings.
