My latest obsession has entailed turkey club wraps. And by obsession I mean my “go-to” lunch every other day of the week. This is simplicity at its finest people.

You know those meals you just can’t get enough of? The ones you crave everyday and never become bored with? Refreshing turkey wraps are mine. With all the fixings because a wrap isn’t a wrap without sauce, toppings, and more sauce with more toppings.
Enter—>Spicy Avocado Mayo Turkey Club Rollups. Aka how to turn an average lunch into something super exciting while still holding onto the beauty of simplicity.

The Recipe Redux challenged us this month to come up with a recipe using “smoked” or “spicy” flavors. Spicy is my second language. I practically live for flaming hot slasa and creamy sauces that end with a kick in the mouth. After seeing the theme for this month my taste buds sent me signals to turn my usual lunch into a spicy fun lunch.
While mayo has never been my favorite sauce condiment, it is usally a sauce base or staple for most sandwiches and condiments. It’s known for it’s creamy texture and putting the aioli in chipotle aioli. Lately, veganese has been my go-to for DIY sauces but that stuff can get pricey and having something homemade always sounds better to me. Especially if that homemadeness involves avocados.

Even if you love mayo, you’re going to love this avocado version light years better. That’s my goal anyways. I was so shocked by how creamy, thick and aioli-like this avocado sauce came out to be…needless to say I am obsessed.
The ingredient list is oh so simple and eons healthier than that store bought jarred mayo stuff while still adding bursts of saucy flavor. To be honest, part of me wants to sell this stuff at my local farmers market, it’s that good…thoughts?

These cute little rollups are super fun to whip up and would make a yummy appetizer to your superbowl party. Yes, they are superbowl worthy…TRUST ME. Ditch the mayo, make room on your coffee table and get ready to become an avocado hoarder because these rollups are about to get trendy guys.
P.S. There is also some vegetarian options in the recipe if you happen to have vegetarian football party friends or you happen to be a plant eater yourself! These babies deserve to be shared with everyone

Spicy Avocado Mayo Turkey Club Rollups
Ingredients
Spicy Avocado Mayo
- 2 large, ripe avocados
- 1/2 tsp smoked paprika or cayenne pepper
- Black pepper + Sea salt to taste
- 4 Tbsp olive oil
- 1 Tbsp sirracha or hot sauce of choice
Roll ups
- 8 slices deli turkey breast
- 1 cup arugula, chopped
- 1/4 cup sliced grape tomatoes
- 2 large whole wheat lavash wraps
Optional Add ins
- Crunchy chopped turkey bacon
- Sliced cheese of choice
Instructions
Vegetarian Options
- Replace meat with hummus or chickpeas or cheese if not vegan
- Add in chopped carrots, bell pepper or vegetable of choice
For the Avocado Mayo
- Blend all ingredients except olive oil and hot sauce in a high powered blender or food processor. Once smooth, add in oil and hot sauce until fully combined. Test the sauce to see if it is spicy enough for you. Add more hot sauce until desired preference is reached.
To Assemble
- Spread the avocado evenly over lavash wraps then layer with turkey, arugula, tomatoes and optional add ins. If you don’t use up all your avocado mayo, serve it with the roll ups as an extra dip.
- Starting at the longest end of the lavash, roll up each wrap like you would a cinnamon roll. Cut into about 8 mini rolls per lavash wrap. Serve immediately.
Notes
- You can make the avocado mayo ahead of time and store it inthe fridge for up to 4 days. The sauce goes great with any kind of wrap or sandwich so it’s nice to have on hand for other things too.
- Serves about 4 as a main meal and more as an appetizer.
