Creamy Goat Cheese, Fig Butter & Caramelized Bacon Crostini’s

Aka the easiest crostini you will ever make. Ever.

I love when things sounds fancy shmancy but they’re actually so idiot proof the Kardashians could do it. Whoops I went there. Side note, I actually watch the Kardashians religiously and will always save my tub of ice cream and sweat pants for a Kardashian binge Sunday nights. JUDGE ME! I won’t apologize for being human, even if it means my brain cells are slowly dying off each episode…

Another thing I love? Fig butter. This stuff is gold. Especially when it’s mixed with creamy goat cheese and spread over fresh toasty bread. While in San Francisco last weekend we visited Tartine Bakery and it was in that moment I knew I could live the rest of my life off fresh bread, cheese, chocolate and wine.

Pretty sure that covers all the essential food groups…minus the vegetable thing but this is dream world so chocolate will count as veggies in my dream world. Man I am good in a crisis.

These crostini’s are nothing out of the ordinary, but they are simple and easy to make which means your life just got easier and a zillion times more delicious.

While browsing the aisles of Whole Foods one day they had a sample of a goat cheese and fig butter log with those super thin and expensive crackers. Ahh it was love at first bite. I made the impulse decision to buy said goat cheese and fig butter, then eat them together like peanut butter and chocolate.

On New Years Eve something in the back of my head told me to melt that goat cheese and mix in the fig butter for a creamy dreamy delicious dip.

I served this dip as an appetizer with toasted bread bites and it was one of my better decisions in life. [Side note I also made the crunchiest, most flavorful chicken tenders inspired from the Seriously Delish cookbook…go buy this cookbook ASAP, best money you will ever invest].

After all the cheese eating, champagne celebrating and bread adventures that took place over the holidays, my mind has still been mesmorized on that goat cheese dip. So I made it into a fancy crostini appetizer then topped it with crunchy turkey bacon carmelized in maple syrup to give you that extra flavor punch. And carmelized bacon just sounds better at the end of this title. Now you get an excuse to impress people and sound super chef worthy.

Or simply make these for yourself and eat them like popcorn while you mindlessly watch The Kardashians…I may or may not have done that…

Creamy Goat Cheese, Fig Butter & Caramelized Bacon Crostini’s

Ingredients

Scale
  • 1 whole grain bread loaf
  • 1 12 oz. goat cheese log (8–12 oz.)
  • 4 Tbsp fig butter (fig preserves)
  • 6 thick slices turkey bacon
  • 1 Tbsp maple syrup
  • Olive oil to grease pan + drizzle on bread

Instructions

  1. Preheat oven to 400 degrees farenheit. Slice bread into thin slices until loaf is used up. Place bread slices on a baking tray and drizzle with olive oil. I didn’t measure this, just use your best judgement and drizzle or brush a little on each. Bake bread for about 10 minutes. It should be crispy and golden, but not burnt.
  2. While the bread is baking heat a skillet with a little oil over medium heat. Slice your turkey bacon into small squares then cook in pan. Cook bacon on each side for about 5 minutes, until it becomes crispy. Halfway through cooking, add your maple syrup. Remember you want the bacon to come out crispy!! Once bacon is done, remove from pan and allow to cool on a paper towel.
  3. Melt your goat cheese and fig butter in a microwave safe dish for about 30 seconds. The outcome should be creamy and easy to stir.
  4. Spread desired amount of goat cheese dip onto each slice of bread then top with a few sqaures of turkey bacon. You can either crumble the bacon or keep them in small swaures. I found that crumbling it was easier to eat but either way works! Serve immediatley.

Notes

  1. Makes about 10-12 large crostini’s
