Some pittzah for your mid week Wednesday slump.

Slump. Such an interesting choice of wording there. But seriously, sometimes Wednesdays could use a little perk-up.
Wether its wine, pizza, cheese…or realistically all three with a yumtastic dessert consisting of dark chocolate swirls…Wednesdays should be an obligatory treat yourself day.

Part of me feels this is the norm for me everyday. Like I deserve that creamy $5 steamed almond milk mocha latte on a Monday…because well Monday. And then Tuesdays are taco Tuesdays, so obvi that is gonna happen.
Oh and Thursday is practically the weekend so let’s get froyo and ball our eyes out to Greys Anatomy.
Then Friday/Saturday…do those days even need explanations? Hello margaritas. And then comes Sunday. I have always equated Sundays to cozy comfort family dinners, so Italian food and deep red wine is a solid way to end the week

So yeah…everyday there is a reason to be excited and eat good food. Maybe you disagree or maybe you completely understand my logic. In that case come over for crispy crisps of crackers to dip into our Wednesday night creamy-cheesy pizza dip. Foodies unite.
Finn Crisp was nice enough to send me some samples of their original crisp bread product made of whole grain rye flour. The rye flavor is definitely strong so spreading something along the lines of creamy pizza really balances everything out.

Creamy Aged Cheddar Pizza Dip with Finn Crisp Crackers
Ingredients
- 1 cup marinara sauce of choice*
- 1/4 cup mascarpone cheese
- 1/2 cup aged cheddar**
- 1/4 cup shredded mozzarella cheese
- Sliced cherry tomatoes
- Handful of arugla
- 1 box Finn Crisp crackers
Instructions
- Heat the marinara in a skillet over medium heat. Once it starts to bubble, reduce the heat to medium low and stir in the mascarpone and aged cheddar cheese. Stir or whisk until the cheeses are fully combined with the marinara sauce.
- Transfer the sauce to a bowl and top with shredded mozzarella and allow to melt. Top with arugala and sliced cherry tomatoes. Serve with fin crisp crackers and enjoy as a pizza dip!
