How was everyones three day weekend?! Mine happened to be delicious. Extremely delicious.
There were the-greatest-cupcakes-ever involved (thanks babes), lots of wine (thanks babes again), chocolate truffles and endless cookies. Oh Valentines Day…
And then this happened.

There are no words that can possibly describe this sandwich the way it should be described. But I will try my best to provide you with the the most vivid of details that it deserves.
It involves four simple essentials:
Bread
Cheese
Chocolate
Raspberries



I know what you’re thinking…Bread and chocolate? Grilled, melty and smooshed together with the creamiest of cheeses?
Oh em double GEE-ZUS what else more is there to life after consuming something so comforting and rich as this?
I call this grilled cheese “the extremist” because it’s a perfect explanation of what this sandwich entails.
It’s the type of sandwich you make in the most extreme situations.
It qualifies as:
A Heartbreak sandwich
Walk of shame sandwich
Holy crap I just got engaged sandwich!
My best friend just moved across the country sandwich…
Aced my chemistry final sandwich
I’m moving to NYC sandwich!!
I just saw the Coliseum for the first time sandwich…


See what I’m saying? It’s an extreme sort of sandwich that you make at the best of times and the worst of times. There’s no in between.
The crispy artisan bread + melty chocolate + rich brie cheese + sweet raspberries is an overwhelming combo.
The type of combo you need in overwhelming situations because it perfectly matches the extremity you’re feeling.


This grilled cheese sandwich just gets me. It reminds me of Paris. I mean the French really know what’s up. Half their diet consists of fresh bread, natural cheese and rich chocolate. Um hello?! Are they the smartest ones out there or what? I guess I’m just waiting for someone to whisk me off my feet and move me to Paris to live among the bread-chocolate-cheese eating creatures of the world.

The Extremist Grilled Cheese {Dark Chocolate + Raspberry + Brie}
- Yield: 2 servings 1x
Ingredients
- 4 thick slices artisan bread
- 1 Tbsp olive oil
- 4 oz brie cheese
- 4 oz dark chocolate squares
- 1/2 cup raspberries
Instructions
- Spread a slice of bread with 2 oz of brie cheese. Place half of your chocolate squares on top of the cheese. Lightly mash raspberries with a fork and put half of mixture on top of chocolate. Top it all with a plain slice of bread.
- Repeat with the other two slices of bread. Heat a skillet on medium heat with olive oil. Place sandwiches onto skillet, cover and let cook for 3-5 minutes. Gently flip over and cook until fillings are fully melted and bread is at a good crisp. Mine took about an additional 3 minutes on medium high heat.
- Cut in half, and serve! Napkins will be needed 🙂
