Some fancy bubbles for your friday. Heeeey.

There’s something about prosecco that’s very enticing. It has this romantic sort of feel and I love every aspect of that.
My mind tends to live in this constant fantasy world so I can’t help but envision 1950s style men dressed up in suits (aka the set of Mad Men, hello Don Draper) shaving off bottles of champagne as bubbles explode everywhere.


Usually wine is my drink of choice. In no way am I this experienced cocktail drinker or alcohol drinker in general but when it comes down to it, wine is my thing. It’s relaxing and pairs way too nicely with steak. (everything relates back to food with me)
That being said this summer has been a strange one in the wine department. It’s not what I have been craving in the slightest. Is my life upside down or what?!



Last week I got together with my favorite nutrition girls for a tapas and wine night. We each made delectable appetizers and feasted over laughs, food and dramatic dreams of the future. It was a good time.
On my way there I made a pit stop at Rite Aid to pick up a bottle of something because not bringing wine felt weird…even though it didn’t sound good to me.
That’s when the bubbles spoke to me. Yes, the bubbles. They really know whats up. And now I am at the conclusion that bubbles, specifically prosecco bubbles, are my new thing. Buh-bye cabernet, hello poppin bottles.


Maybe it’s because prosecco is sparkling Italian wine and I left my heart in Italy a long time ago. Or maybe because prosecco sounds fancy and reminds me of Don Draper from Mad Men. I dunno.
But right now I am in my fancy shmancy bubbly prosecco phase and you should really join in.

This particular drink is not anything out of the ordinary. Besides the balsamic. That might be weird to you but I promise once you buy good quality flavored balsamic you will never go back. And you won’t need sugar to sweeten your bubbly prosecco drinks.
It’s pretty life changing. Speaking of which, is it 5 o clock yet?

Mango Berry Balsamic Sweetened Prosecco
Ingredients
- 2 cups strawberries, sliced
- 1 cup raspberries
- 2 mangos, diced
- 1/4 cup white strawberry balsamic*
- 1 bottle prosecco, chilled
Instructions
- Place berries and diced mangos in a large pitcher. Pour in white strawberry balsamic and mix/smash together the berries with balsamic (better known as “muddling”). Add in the chilled prosecco and stir it all up. Taste to see if you want to add more balsamic for extra sweetness. You can serve right away or allow the berries/balsamic to marinate in the prosecco by chilling longer in the fridge. I did this and preferred the marinated flavors a lot more but either way works!
Notes
I used white strawberry balsamic from We Olive, a specialty olive oil and balsamic store. Please use a good quality sweetened balsamic, preferrably aged for a long time. The longer it’s aged the sweeter + thicker it is!
