Grilled Corn Salsa

This Grilled Corn Salsa takes summer loving to a whole new level with fresh corn on the cob, the char of the grill and the heat of jalapeños.

I am all about summer grilling. Anything that can, will, go on the grill. And my favorite thing of all time is summer corn. I eat more corn in the summer than any other vegetable, and I’m sure I’m a farmer’s best friend. 🙂

Here’s an easy tip for this recipe: when you cut the kernels off the corn, use an angel food cake pan, insert the tip of the corn in the middle hole of the cake pan, then cut the kernels – all the kernels will fall nicely and neatly into the bottom of the cake pan! {Email me if you want to see a picture of how this works.}

And on the grill, corn couldn’t be easier. I shuck the corn and place it straight on the grill. No oil, no butter, nothing but the corn. What I love about this method is, the corn is in it’s truest form, and it cooks up fast in 10-12 minutes.

We both love the char marks that are so unique to grilling, that gives it that chewy texture that we love so much.

Grilled Corn Salsa

  • 6 ears corn, shucked
  • 2 jalapenos, finely diced
  • ¼ cup red bell pepper, diced
  • ½ cup red onion, diced
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt
  1. Pre-heat grill to medium-high heat.
  2. Brush corn with 1 tablespoon olive oil. Grill corn, covered, turning frequently, until char marks appear, approximately 10-15 minutes. Cut kernels off corn.
  3. Add all ingredients (including the remaining 1 tablespoon oil) to a medium-size bowl and stir until combined. Serve with tortilla chips.
