So I think we could all use a little more almond cookie sandwiches in our lives. Am I right? The best part about this recipe is the cookies are small. Hence the “bites”. Mini foods make my world go round.
They’re just so cute and portable and totally acceptable to pop three in your mouth without overdoing it. I can’t stand having just one large cookie. Or one large sandwich. Women like options. We need variety and if you’re like me you enjoy savoring yummalicious cookies for as long as possible.

It’s no secret that almonds are one of the trendiest foods on the block, and for good reason. They are a full throttle snack option supplying you with healthy fats, protein, fiber and good old vitamin E.
Being a full-time student while balancing work, blogging and playtime, my body and brain crave healthy snacks to push me through those three-hour biochem labs. Having enough food on hand is an essential to surviving college, let alone the chaos of life.
Oh and most importantly how else am I gonna binge watch Tha Kardashians, Big Bang Theory or House of Cards without my mini almond cookies? It feels like I lose some brain cells every time I give into the silly reality show of The Kardashians, so like I need the healthy almond cookies. To give me back that brain power. Logic.

When it comes down to it snack foods are probably my favorite foods. California Almonds is kicking of their #CrunchOn campaign this month and I am too excited to be apart of it, especially considering my snacking love affair with almonds and all things nut butter.
So when snacking involves mini cookies full of hearty oats, fibery oat bran and good-for-you almond butter that get sandwiched between creamy yummness, you better believe we are jumpin on that train.
And on that note it’s time to get bakin and #CrunchOn with California almond buttah!!

Mini Almond Oat Bran Cookie Sandwiches
Ingredients
Cream
- 1/2 cup whipped cream cheese
- 2 Tbsp almond butter
Cookies
- 1.5 cups rolled oats
- 1 cup oat bran
- 1/2 tsp baking soda
- Sea salt + cinnamon to taste
- 1/2 cup maple syrup
- 1/2 cup California Almonds almond butter
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- To make the cream whisk together the whipped cream cheese, almond butter and maple syrup until fully combined. IF the cream cheese is a little too hard to mix, melt in the microwave for about 15 minutes. Set aside while you prepare the cookies.
- Combine the rolled oats, oat bran, baking soda, sea salt and cinnamon in a large bowl. In a separate bowl whisk the maple syrup and almond butter until it forms together. My almond butter was drippy so there was no need to melt the mixture. Pour this into your rolled oats mixture and mix until the dry ingredients are fully incorporated with the wet and a dough forms.
- Scoop the dough into small balls, about 1 Tbsp big, with a small cookie scoop or tablespoon measuring spoon. Remember you want them to be small since you will be making them into sandwiches! After this, Repeat this until all the dough is used up. Should make about 38 small cookies.
- Bake for 14-15 minutes then allow the cookies to cool on the baking sheet for 5 minutes. After this, Place cookies on a cooling rack and once they are completely cooled spread half with the cream cheese spread. Sandwich the cookies together and eat up!
Notes
- Cookies will be slightly crunchy the first day and begin to soften over the next few days. These stay fresh in an airtight container at room temperature for 5 days.
