I know what you’re thinking…another granola recipe? Does this girl eat anything else?

To be honest…most of my day consists of granola. Here’s a little breakdown of how granola is a deep part of my life:
1) Favorite topping to top things with such as: smoothies, oatmeal, yogurt bowls, ice cream, overnight oats, roasted bananas, brownies…
2) Best trail mix addition: especially the thick crunchy granola cluster kind + almonds, peanuts, candied pecans + chocolate chips (YUMMM)
3) Late night stress baking: while I do love me a glass of deep red wine to unwind, baking granola has always been therapeutic for me. Most of the time I hardly even measure the ingredients and just let things flow. It’s more soothing than you think.
4) Awesome DIY gift for my loves; Wether it’s your birthday, the holidays or I just freakin appreciate your presence in my life…homemade granola is how I roll.
5) Simply as it is. Basically a super easy grab and go snack throughout the day. I may be scrambling out the door with my coffee in one hand, handfuls of granola in the other or in dire need of a late night snack while curled up with a new book…granola is my jam.

See? I don’t lie when I say super dramatic things about granola. It’s my thing and always will be. The Recipe Redux challenged us this month to make a recipe from one of our favorite cookbooks via pages 54 or 154.
I got the Seriously Delish cookbook by the amazing Jessica Merchant from http://www.howsweeteats.com/ last Christmas. Exactly one year ago, so crazy!



You know those cookbooks you turn to when you need something drop dead delicious and don’t even have to second guess it coming out bad? That’s this cookbook. I can pick out a recipe for any occasion and not feel an inch of worry or stress because I know it won’t let me down.
I was SO excited page 54 was her oatmeal cookie granola. Since a) granola is my bees to the knees and b) last-minute holiday DIY gifts people! Too perfect. Make this granola for your loves then go buy Jessica’s cookbook as a Christmas present to yourself

Oatmeal Cookie Granola

- 2 1/4 cups rolled oats
- 1 cup sliced almonds (I used a mix of pecans and almonds)
- 1/2 cup ground flaxseed (I used almond meal)
- 1 Tbsp brown sugar
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup honey
- 2 Tbsp unsalted butter
- 2 Tbsp coconut oil
- 2 tsp vanilla extract
- 1/2 cup mini chocolate chips (I used dark chocolate chunks)
- Preheat oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper or a slipmat.
- Whisk together oats, almonds (or pecans), flaxseed (or almond meal), brown sugar, cinnamon and salt in a large bowl.
- Melt the coconut oil, honey, vanilla extract and butter in a microwave safe bowl for about 30 seconds. (Jessica’s recipe calls for heating over a skillet, either way will work).
- Whisk together the melted ingredients then pour into dry ingredients. Stir with a large spoon until oats are fully coated. Bake for 10 minutes then toss the granola with a spatula. Bake for another 10 minutes and toss. Bake for a final 10 minutes then remove from the oven and allow to cool for 5 minutes.
- Toss in the chocolate chips and let the granola completely cool on the baking sheet. (I cooled mine for at least 30 minutes)
