My mind is clearly in breakfast mode.

From cereals to granola to smoothie bowls and now overnight oats…my tastebuds can’t get enough of that comforting feeling breakfast brings.
I know most of my fellow food bloggers and health nuts are well aware of overnight oats. You are probably thinking “le sigh another typical oatmeal recipe”. But waaaait don’t get all negative nancy on me. The truth is many of the people who read this blog are my family and friends and you will be shocked to hear not a lot of them are aware of this overnight oats obsession.
Yes, there are other human beings outside of the blogosphere who don’t get a constant update on every single food fad. Weird, I know

Overnight oats are the first meal that really got me hooked on oatmeal. I started preparing this convenient overnight breakfast way before I even had my own food blog. It started to appear across the web and I remember seeing it pop up on the numerous blogs I would read like Cait’s Plate and Edible Perspective.
Back then I never really followed recipes. I would glance at the ingredient list and sort of play around with what was in my kitchen. Eventually I narrowed down my own recipe that I am sure my boyfriend and close family members will appreciate since they are constantly asking how to prepare it.

Sometimes the simple recipes are the best of recipes. This “parfait” is loaded with fibrous oats, naturally sweetened with mashed banana and protein packed from the greek yogurt. The strawberry, granola and peanut butter toppings are the icing on the cake of it all. Plus the fruit and healthy fats from the peanut buttah is going to keep you full all morning long.
After being a little MIA from the blog this past week (hello I have missed you all), it was only natural I come back with a classic nutritious recipe that will kick-start your day in the best way possible.

Banana Berry Overnight Oats Parfait
- Yield: 1 servings 1x
Ingredients
- 1/3–1/2 cup rolled oats
- 1/2 cup plain greek yogurt
- 1/3 cup vanilla almond milk
- 1/2 mashed banana
- 1 Tbsp chia seeds (optional)
- Handful of chopped strawberries
- Granola of choice
- 1 Tbsp peanut butter
Instructions
- Combine oats, greek yogurt, almond milk, mashed banana and chia seeds in a bowl until well combined. Store covered in the fridge overnight to allow to oats to thicken.
- The next morning layer your oats in a jar with strawberries, granola and peanut butter. Or you can simply top the overnight oats with these ingredients if you’re short on time!
