More childhood favorites. Because I will always be a kid at heart when it comes to food.

Pancakes + bacon, pb&j sandwiches, kraft mac n cheese, double chocolate brownies, peanut butter with a spoon, chocolate chip cookies…all my favorite things as a child. And let me tell you, when I liked something, I would eat that meal everyday with no issue. This could last weeks, months, maybe years?! I don’t remember…but what I do rememebr is my obsession with chicken nuggets.
You know the T.V. dinner kind that came wrapped in a box with a side of brownie for dessert? Yeah…my diet was very Americanized growing up but hey, that kid food was delicious back then.

Nowadays, a “kid cuisine” T.V. dinner doesn’t exactly look too appetizing when I pass the frozen foods section in the market. I guess that means I’m an adult now right? Even though I’ll have no problem eating cake for dinner, staying up late watching movies and cuddling with my dalmation stuffed animal…So yeah the whole adult thing…when is that suppose to happen?
Are we suddenly suppose to stop doing all the “kid” stuff when we get into our twenties? Because if so I am so failing at being a girl in my twenties. Sure I am extremely mature for my age (what does that even mean?) but I’m not ready for this so called “real world”. Can’t I just live life blissfully while eating cookie dough and drinking mimosa’s all day? I truely think no one ever becomes an adult. We’re all just kids stuck inside these old bodies pretending like we know what’s what.
When in reality, we just want some chicken nuggets. With some brownies for dessert. So here are some “adult” version chicken nuggets with fancy maple dijon dip. Let me just work on the brownie dessert part and get back to you. Until then, make these PLEASE! So easy, so crispy yet so healthy. Cheers to not being adults!

Crispy Maple Dijon Chicken Nuggets
- Yield: 4–6 servings 1x
Ingredients
- 1 lb chicken breast, boneless and skinless
- 1.5 cups panko bread crumbs
- 1/2 cup almond meal
- 1 Tbsp each: oregano, garlic powder
- 1 Tbsp chicken seasoning (Old Bay or Trader Joe’s 21 seasoning salute)
- Sea salt and pepper to taste
- 1 large egg
- 1/4 cup fat free milk
- 2 Tbsp maple syrup
Maple Dijon Sauce
- 3/4 cup greek yogurt
- 1.5 Tbsp dijon mustard
- 1 Tbsp maple syrup
Instructions
- Preheat oven to 400 degrees farenheit. Cut chicken into bite sized cubes then set aside.
- Combine almond meal and seasonings in a large bowl. In a seperate bowl whisk together egg, milk and maple syrup. Place your panko bread crumbs in another seperate bowl. (A lot of bowls, I know!)
- Dip each chicken nugget into almond meal mixture, then egg mixture and finally toss through bread crumbs so the chicken is completely covered. Place on a parchment lined baking sheet and repeat until all your chicken is used.
- Spray with cooking spray (or olive oil spray) and bake in the oven for 10 minutes. Flip each nugget over and bake for another 8-10 minutes. Set oven to broil and bake 1-2 minutes for a final crisp effect.
- While the chicken is baking mix together you maple dijon ingredients and serve immedietly with chicken when it’s out of the oven.
