Woah, what a week it has been! As I write this post I am recovering from a 2 hour microbiology final + a week filled with 11 hour work days. Yes, somehow I managed to stay alive and breath throughout all this. And make cookies. And eat chicken. My plan is to be Wonder Woman for Halloween this year…I might as well live up to the name and save the world one cookie recipe at a time.

So my spring semester is coming to an end and exciting things are to come this summer! For starters, the whole job thing. This week I have been training to become a physical therapy aide for a private practice near my house! So far I am loving it and learning SO much just by working one on one with patients.
It feels great helping people challenge themselves, get better and recover. It’s a fun process to watch and at the same time I am learning that much more about the human body and what we are capable of. Be kind to your bodys guys, it’s gonna pay off in the long run! Work out, stretch, stand up straight, strenghten your muscles, rest…and most importanty, eat good food. Like this chicken.


This recipe was originally intended to be an orange chicken type dish. It almost is except it doesn’t exactly remind me of Trader Joe’s famous orange chicken or the kind I used to inhale at panda express back in my childhood days.
It’s a very lightened up version of that, given there is no breading or deep frying involved. So instead of getting you excited for orange chicken, let’s call this “Honey-Orange Glazed Chicken”. Tastes just like it sounds!

The best part? It takes less than 30 minutes to make. The best way to enjoy this is served over brown rice or quinoa and some veggies, so make sure to have that already prepared! The ingredient list for the chicken is short and simple, with no weird additives or unheard of inredients you may find in some pre-made, store bought chicken.
This made the perfect meal to come to after my 11 hour training days and gave me good fuel to study microbiology all though the night. Life of a college student, what can I say.

Honey-Orange Glazed Skillet Chicken
- Yield: 4–6 servings 1x
Ingredients
- 1 lb chicken breast
- 2 Tbsp sesame oil
- Sea salt + pepper to taste
Sauce
- 1/4 cup orange juice
- 1/4 cup raw honey
- 3 garlic cloves
- 1 Tbsp soy sauce (reduced sodium)
- 2 Tbsp brown rice vinegar
- 2 Tbsp tapioca starch
- 1 Tbsp red chili paste
Garnish
- Sesame seeds
- Green onion
Instructions
- Whisk together all sauce ingredients until well combined. Set aside.
- Cice up your chicken into bite sized cubes. Heat oil in a large pan over medium heat. Add chicken, salt and pepper. Saute for 15-20 minutes until chicken is browned and almost cooked. Pour in orange chicken sauce and stir.
- Allow sauce to boil and let boil for about 2 minutes until thickened.
- Remove from heat and serve over brown rice, quinoa or vegetables. Garnish with chopped green onions and sesame seeds
