
Ok, confession time: after years of secretly making fun of people who follow, watch and generally give a crap about the Kardashians, last weekend I watched an episode of Keeping Up and–gulp–got into it. Like, really into it. One 30-minute episode turned into a marathon and before I knew it I was hooked. Turns out I’m not immune to the lure of reality TV, aka candy for the brain!

Just because my mind has been indulging a little too much doesn’t mean the snacks have to follow suit. These crispy roasted chickpeas are addictively delicious and make a great lighter alternative to popcorn or chips – ideal for an afternoon of Keeping Up with the Kardashians binge-watching or a movie night in. Plus, they’re high in fibre, protein and essential vitamins and minerals.
These chickpeas also make a great portable midday snack. I divided this batch into single-serving bags and stashed them in my gym bag and purse throughout the week. Heading to the gym on an empty stomach is never pleasant (or wise), so having a portable bite on hand was super convenient.

Spicy roasted chickpeas
Description
An addictively crunchy snack with lots of flavour!
Ingredients
- 1 19-oz can chickpeas, rinsed and drained
- Canola oil spray
- 1 tbsp Old Bay seasoning
Instructions
- Pre-heat oven to 400 F. Pat the chickpeas dry with paper towel and spread out in a single layer on a parchment-lined baking sheet. Spray evenly with canola oil and sprinkle with seasoning, shaking the pan a few times to roll chickpeas around to coat. After this, Bake for 30-40 minutes or until golden brown and crispy.
